The season 3 monster is the most repulsive in the show: a mass of flesh, teeth and limbs, assembled from the Hawkins residents the Mind Flayer possessed then melted. Here is how it is born, what it wants, and how it dies in the hall of Starcourt.

A fragment left on this side
When Eleven closed the gate in December 1984, part of the shadow was on our side, in Will's body, before being expelled. That fragment survived, inert, in the abandoned Hawkins steel mill. In the summer of 1985, the Russian machine trying to reopen the gate under Starcourt wakes it: it has no more creatures, no more tunnels, only a will and a need for bodies.
Its first host is Billy Hargrove, whose Camaro skids in front of the steel mill one June night. He is dragged inside, and the shadow enters him.

The possessed: rats, then humans
The monster starts with the rats, which eat fertilizer and chemicals before exploding into pools of flesh. Then Billy delivers Heather, the lifeguard, and her parents; the possessed, whom the group calls the “Flayed,” multiply in Hawkins: they eat toxic products, flee heat, and end up melting in a mass to join the monster's body.
Nancy and Jonathan follow the trail of the rats; Eleven that of Billy. The sauna where the group locks Billy in reveals the rule: heat drives the monster out, as in 1984.

The flesh monster
The result is a creature several meters tall, made of melted flesh, limbs of the possessed, and a petal mouth inherited from the Demogorgon, that grows with each new host absorbed. It has no plan except the Mind Flayer's: kill Eleven, the only one who ever closed a gate. It attacks her at Hopper's, bites her on the leg, and follows her to Starcourt.
Eleven's wound is decisive: part of the monster stays in her leg, and her powers disappear with the infection. She will get them back two seasons later.
A nod to The ThingThe flesh monster is the show's most direct nod to John Carpenter's cinema: The Thing (1982), where an organism absorbs bodies and remakes them. The effects, largely practical, were designed to be as organic as possible.
The battle of Starcourt
On the evening of July 4, the monster enters the mall through the roof. The group bombs it with fireworks from the upper floor, Eleven, powerless, is trapped by Billy, and Eleven gives him back a memory: his mother on a beach, in California. Billy turns against the monster and holds it with his bare hands, tentacle after tentacle, until it kills him.
Underground, Joyce and Hopper turn the two keys of the Russian machine. The gate closes, the bond with the Upside Down is cut, and the flesh monster collapses as one in the hall, as the demodogs had done in 1984.
What is left
The body is destroyed with Starcourt, in what the town will call a fire. The Mind Flayer itself goes back into the Upside Down, and Season 4 reveals who had been commanding it from the start: Henry Creel. The flesh monster was only its ugliest hand.

How the flesh monster was made
The 1985 monster is the first on the show to owe nothing to the Upside Down in its matter: it is made on this side, from the bodies of the possessed. That is what makes it so different from the Demogorgon, an animal, or the shadow of 1984, a silhouette. It has a texture, teeth, limbs that used to be human arms, and it grows before your eyes as the possessed throw themselves onto the pile.
The hospital sequence, in the fifth episode, gives the instructions: Tom, the editor, and Bruce, the journalist, melt into a puddle that reforms as a creature barely bigger than a dog. At Starcourt, dozens of bodies make a giant of it. That raw-material logic explains why Billy, who recruits the possessed, is the key of the season, and why his death weakens the creature.

Why the heat, and why the sauna
Season 2 had established that the shadow fears heat: that is how Will was freed. In 1985, the group applies the lesson to Billy, locked in the pool sauna heated as high as it will go. The test half works: Billy suffers, the monster in him screams, but it does not come out, and Billy almost kills Eleven before she throws him through the wall.
The scene has an unexpected afterlife. In Season 5, it is that sauna memory that gives Lucas the idea of using the radio tower's electricity to briefly revive a Demogorgon. What the group learns in 1985, the heat, the electricity, the link between the host and the hive, serves through the last shot of the show.
